It’s been a while since I’ve participated. Blogging in general has been like pulling teeth for me. I seem to go through these phases and I’m not sure why. Well, today I thought that I’d share with you one of my chicken burger recipes that I concocted a couple of months ago. Last year I worked at the Daily Grind Unwind and got the chance to work with some different ingredients which inspired the burger. The recipe is below the menu.
Monday - Chicken & Dumplings
Tuesday - Nachos
Wednesday - Philly Cheesesteaks & chips
Thursday - Feta Chicken Burgers
Friday - Chicken Salad (green salad)
Saturday - Spaghetti
Sunday - Chicken Salad Sandwiches
Chicken Feta Burgers (Feeds 6)
12 pre-frozen chicken tenders
4oz crumbled feta cheese (tomato & basil)
Fresh spinach (handful)
Pesto sauce
Provolone cheese slices
Tomato (sliced)
Country Potato sandwich buns
Grill or pan cook chicken tenders until done. Spread pesto sauce on bottom bun. Layer 2 chicken tenders, nestle 1 tablespoon of feta cheese between chicken tenders, one slice of tomato, and one slice of provolone cheese. I have a varibroiler in my oven, so I set all 6 prepared sandwiches on a cookie sheet and toast them for about 5 minutes to let the cheese melt. Then I top the sandwiches with a few leaves of fresh spinach and the top bun. Viola!!




Okay, I am so NOT a runner, but have always dreamed to be. Tomorrow I begin my journey. My biggest struggle? Doing it alone. I have a friend that has said she would come out and run with me, but I’m not sure she will make it, and I don’t know that she’ll be there every day, though she runs often. I have several friends that have completed the Los Angeles Marathon and they are definitely my inspiration, but I’m afraid that I’ll begin and then quit because it’s too hard.
